Looking for great butter stories, this is one of the first we found—about a tiny Vermont dairy that produces no more than 60 pounds of butter a week. And it is no accident that this farmer of great character has chosen to name her Orwell, Vermont operation Animal Farm.
Diane St. Clair’s organic butter is sold to some of the world’s finest restaurants, and considered the best you can get anywhere. Yes, even better than French butter! Another part of the story I love is that the flavor is not consistent: it changes over the course of the year, reflecting what St. Clair’s contented cows are eating as they roam freely about her pastures. Incredibly fresh, produced in tiny batches, I hope one day that you and I can experience butter like this.
